Cajun Chicken Cutlets and Spinach Gratin

I already knew I liked Cajun chicken, so this seemed like a safe bet to start. The book suggested pairing it with the spinach gratin, so I tried both at the same time.

Substitutions/Changes:

  • Ground almonds for almond meal/flour, because I’m still not sure what the difference is.

American to Canadian:

  • Whipping Cream for Heavy Cream (which doesn’t seem to be a thing up here).

Mistakes:

  • I didn’t take the chicken out to thaw in the morning, and had to defrost it in the microwave.
  • I mis-read the cooking instructions, and put all the cheese in when I should have separated it. That meant using an extra ¼ cup.
